It is possible to create Payment Pages that are not linked to CRM.

When setting up your payments page choose "No CRM" from the "Select CRM Instance" dropdown.

This will remove the options for writing back an activity and for choosing the additional fields.

The payment page and reporting will operate as normal but no information will be written back to CRM.
