When setting up each payment line item you can specify a maximum quantity for each item up to a maximum of 10. For exampe, you might set the Max Qty dropdown to 1 where the line item is an event.

When a user is on the payment screen they will be able to select a total number to purchase of each line item up to the maximum you have specified.
